Glou Glou Red Wine
The organic dry farmed old vine, Zinfandel was hand-picked in Mendocino at sunrise and brought down to Healdsburg.
50% whole clusters and 50% destemmed berries were gently added to tank for a semi-carbonic fermentation for 10 days before being pressed. Fermentation was native with an experimental 4.8% French Colombard, Gewürztraminer, Albariño co-ferment.
The Glou Glou red wine was sur lie aged before being racked off the lees to tank for bottling on a full moon's day. Each bottle was waxed by hand.
Unfined, Unfiltered, Native Fermentation and Semi-carbonic. 15 ppm total sulfur, 8 ppm free. '23 Jajaja Produced in Healdsburg, Sonoma County, California.
