Orange Wine from California

We picked Organic French Colombard, Gewürztraminer, and Albariño from Madera, Paso Robles, Potter Valley, and Lodi.

The whole berries were gently added to tank for a semi-carbonic fermentation for 24 days before being pressed. Fermentation was native with an experimental 9% Zinfandel field-blend coferment.

The skin-contact orange wine was aged sur lie before being racked off the thick lees to tank on a full moon's day.

Unfined, Unfiltered, Native Fermentation and Semi-carbonic. 16 ppm total sulfur, 7 ppm free. '23 Bheeyo produced in Healdsburg, Sonoma County, California.

Qu'est-ce que le vin naturel ?

Également connu sous le nom de vin brut ou vin d'intervention minimale, nous souhaitons laisser nos raisins chanter et créer des vins qui sont des reflets vivants de la terre.

1. Agriculture

Nos vins naturels sont issus d'une agriculture durable : des raisins cultivés selon des méthodes d'agriculture biologique ou biodynamique.

2. Spontané

Nous laissons les raisins subir une fermentation spontanée par leurs propres levures indigènes et sauvages au lieu d'utiliser des levures cultivées en laboratoire.

3. Vignoble

Dans la cave, nous évitons les plus de 60 additifs courants dans les vins conventionnels comme les produits d'origine animale, les produits chimiques synthétiques, les arômes ou les manipulations comme la pasteurisation.

Le seul ajout est du soufre limité pour protéger les vins jusqu'à la mise en bouteille.
